Dark Chocolate Oatmeal Cookies

This is my 100th post!!!!! and I have done it in just over a year. I am having so much fun with this blog and I hope others are having fun with it too! These dark chocolate oatmeal cookies are a really nice little twist on your standard chocolate chip cookies. They would also provide a really good base for a couple of different twists that I am going to explore in future, think a touch of cinnamon or a raisin/chocolate hybrid.

Cookies are cookies, so they will always be a treat, but the oatmeal option makes them a bit more filling and gives them a really nice texture for dipping in tea or hot chocolate if you want!

You can use any kind of chocolate chips you want, but I really recommend using dark chocolate, it creates such a nice flavour!

Dark Chocolate Oatmeal Cookies

This recipe makes 40 cookies at 150 calories each.

Ingredients:

  • 360g (1 1/2 cup) brown sugar
  • 250g (1 cup) butter
  • 1 tsp vanilla
  • 1 egg
  • 180g (2 cups) oats
  • 240g (1 1/2 cup) all-purpose or plain flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 200g (1 cup) dark chocolate chips

Preparation:

  1. Preheat the oven to 170 C or 340 F and line two baking trays.
  2. In a large mixing bowl, cream together butter and brown sugar until fully combined.                                      DSC_0307
  3. Add vanilla and egg and mix until light and fluffy.                             DSC_0308
  4. Stir in all other ingredients until just combined.                            DSC_0310
  5. Scoop dough in about 1Tbs lumps onto baking tray, making sure to space the lumps a couple of inches apart.                              DSC_0311
  6. Bake for 10-12 minutes until edges are turning golden brown.
  7. Allow to cool and enjoy!
