Mint Chip Fudge

J and I are headed out for holiday soon, but I wanted to do a quick bake before we went. I thought this mint chip fudge would be a great new recipe. It combines some of the nice elements of the Milk and Cookies Fudge and the Mint Chocolate Fudge, into its own simple and delicious recipe.

Mint Chip Fudge

This recipe makes 32 pieces of fudge at 102 calories per piece.

Ingredients:

  • 525g (3 cups) white chocolate (roughly chopped)
  • 400g (1 can/1.5 cups) condensed milk
  • 2 tsp. peppermint extract
  • green food colouring
  • 5 Tbs dark chocolate chips

Preparation:

  1. Line a baking tray measuring about 8″ x 12″ in size with baking paper.
  2. In a double boiler or the microwave (in 30 second bursts) melt together the white chocolate and condensed milk, stirring regularly.     dsc_0191
  3. When completely combined, mix in peppermint extract and food colouring. dsc_0192
  4. Scatter two tablespoons of chocolate chips across bottom of baking pan.  DSC_0297
  5. Pour in mint fudge over the chocolate chips and spread to form a smooth layer. DSC_0298
  6. Scatter the rest of the dark chocolate chips across the top and gently press in. DSC_0299
  7. Let fudge set in fridge for at least 2 hours.
  8. Cut up and enjoy!
