Mint Aero Brownies

J and I had some exciting news a few weeks ago, we got engaged! We are feeling really happy and excited and have started our planning. We are going to have a fall wedding and have been looking at a LOT of fall pinterest ideas, so I have been in a very cold weather, cosy food sort of mood even though its the middle of July. I am therefore blaming this for why I decided to make mint chocolate brownies that really remind me of a cold weather treat.

These brownies are superb! They come out very fudgey and thick. The mint flavour is also in the brownie mixture, not just the chocolate chunks, creating a really rich and delicious flavour. I ran these past my taste tester Katie, who seemed to like them quite a bit!

Mint Aero Brownies

This recipe makes one tray of brownies that are 323 calories if you cut them into 15 pieces.

Ingredients:

  • 250g dark chocolate (roughly chopped)
  • 230g butter
  • 3 eggs
  • 1 egg yolk
  • 275g white sugar
  • 2 tsp. peppermint extract
  • 1/4 tsp salt
  • 65g plain or all-purpose flour
  • 60g cocoa powder
  • 150g mint aero (chopped up)

Preparation:

  1. Line a baking tray about 8″ x 12″ with baking paper, although bigger or smaller works just fine.
  2. Preheat the oven to 150 C.
  3. Heat the butter and a dark chocolate in a double-boiler or the microwave, stirring regularly until completely melted and combined.
  4. In a large mixing bowl, whisk together eggs, caster sugar, peppermint and salt.  DSC_0262
  5. Add the chocolate and beat into the eggs until well combined.                  DSC_0263
  6. In a separate bowl, combine the flour, cocoa and half the chopped up mint aero.
  7. Add the dry ingredients into the chocolate mixture and fold in with a large spoon until jut combined.
  8. Pour mixture into the baking tray.
  9. Sprinkle second half of the mint aero over the top of the mixture, pressing in gently.  DSC_0264
  10. Bake for 40-50 minutes until top is firm and shinny, and the mixture doesn’t wobble. When you insert a toothpick it should still come out with some wet mixture, but be firm enough that the brownies are baked through. This is a long slow bake, but really worth it for rich fudgey brownies.
    • You can bake for longer if you want a more dry, cakey consistency.
  11. Let brownies cool in the pan, then remove and cut into pieces.   DSC_0265
