Lemon Poppy Seed Muffins

I really like lemon poppyseed muffins, they are my favourite muffin in fact, but I have never tried baking them. This recipe makes fun bite-sized muffins that are the perfect mid-afternoon snack! Hope you love them as much as we do! This will definitely be a repeat recipe!

Lemon Poppy Seed Muffins

This recipe makes 16 muffins at 136 calories each.

Ingredients:

  • 1/2 cup butter (softened)
  • 2/3 cup white sugar
  • 2 eggs (separated)
  • 1 1/3 cup all-purpose or plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 Tbs poppy seeds
  • Zest of 2 lemons
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 2 Tbs lemon juice
  • 1 tsp vanilla

Preparation:

  1. Preheat the oven to 180C or 350F and line two muffin trays with liners.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.DSC_0200
  3. Separate the eggs and mix in the egg yolks one at a time, beating well after each.
  4. In a separate large bowl, combine the flour, baking powder, baking soda, poppy seed, lemon zest and salt.
  5. Mixing on low speed, add half the dry ingredients to the butter, then the buttermilk, then the second half of the dry ingredients and mix until just combined.
  6. Mix in the lemon juice and vanilla until just combined.   DSC_0202
  7. In a separate bowl, whisk the egg whites until they form soft peaks. DSC_0201
  8. Gently fold the egg whites into the rest of the mixture.    DSC_0203
  9. Spoon the batter into the muffin liners, filling them 1/2 – 3/4 full.
  10. Bake for 15-20 minutes, until you can insert a toothpick and it comes out clean.
  11. Remove from the oven and let cool completely.
  12. Eat and enjoy!
