Lemon Sugar Cookies

I wanted to make a nice and easy summery cookie now that the weather has turned a bit grey and dreary. These lemon sugar cookies are a great and easy recipe for a yummy and summer-flavoured treat!

Lemon Sugar Cookies

The recipe makes 30 cookies at 90 calories per cookie.

Ingredients:

  • 1/2 cup butter (softened)
  • 1 1/4 cup white sugar
  • zest of one lemon
  • 2 Tbs lemon juice
  • 1 large egg
  • 1/2 tsp vanilla
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 cups flour

Preparation:

  1. Cream together butter and sugar in a large mixing bowl until light and fluffy.
  2. Add the zest, lemon juice, egg and vanilla and mix until just combined.    DSC_0188
  3. Combine the baking soda, salt and flour and add to the wet ingredients, mixing until combined.
  4. Wrap the dough and refrigerate for 2-4 hours (the dough will last overnight in the fridge if you want!).                           DSC_0189
  5. Preheat the oven to 190 C or 370 F and line two baking trays with baking paper.
  6. Form the dough into balls (about 1 1/2″ in diameter or your chosen size) and place spaced apart on the tray. Press down so dough is flat.
  7. Bake for 12-14 minutes until tops are golden at the edges.    DSC_0194
