Scrummy Homemade Brownies – The Perfect Present

So its been a little while since I posted. J and I had a big adventure! We were over in my home town of Vancouver for a HUGE archaeology conference and then off from there to Hawaii where I got to watch my friends Leila and Wayne get married on a beach in Kauai (it was beautiful and I cried a lot).

All this adventuring didn’t leave me a whole lot of time for baking, but now I am back and ready to bake!

I thought I would start back with a bit of a gift recipe. This is such a great easy no-fuss brownie recipe and it is a great way to give a gift! Since starting this baking blog my friends have had to get very accustom to me turning up for everything with baking as gifts and for the most part they seem to enjoy it! This recipe can be gifted as fully baked brownies, but also really lends itself to making a little DIY gift with the addition of a simple glass jar.

I will make mention of it in the recipe below if you do want to turn this into a gift. All you need to do is combine the dry ingredients and place into a nice mason jar (or similar) and then write up a nice recipe card to tie onto the jar! I have got homemade brownie mix as a gift before and it is a really fun thing to do!

Scrummy Home-made Brownie (Mix) 

This recipe makes 9 big brownies at 277 calories each or 12 medium at 209 calories each.

Ingredients:

Dry:

  • 1 cup castor sugar
  • 1/2 cup plain (all-purpose) flour
  • 1/3 cup cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking powder

Other:

  • 1 cup melted butter
  • 2 eggs
  • 1 tsp vanilla
  • 100g chocolate, chopped (optional)

 

Preparation:

  1. In a bowl, combine all the dry ingredients.                   DSC_0028
  2. If you are going to give this as a home made mix then you can pour this mixture into a nice jar, write up the rest of the steps listed below. 
    • You can also put the chopped chocolate on top of the dry ingredients if you want!                                                  DSC_0030
  3. Preheat the oven to 170 C (350 F) and line a baking tray  that is roughly 8″x8″.
  4. Melt butter in a saucepan over medium heat and set aside to cool.
  5. Whip together the eggs and vanilla with an electric or stand mixer.     DSC_0031
  6. Add in the dry ingredients and mix until just combined.     DSC_0032
  7. Add the butter and mix until just combined.
  8. Mix in the chocolate if you are adding it (careful not to over mix).              DSC_0034
  9. Pour into baking tray.
  10. Bake for 15-20 minutes. Less if you want the brownies more gooey, longer if you want them a little firmer.
  11. Now enjoy!
