Chocolate Cranberry Oat Bars

I always forget how much I like oat bars, but I was trying to come up with something to bake yesterday with the things I already had in by cupboard and I remembered how yummy these can be.

This is a really nice healthy recipe with whole meal flour, oat and peanut butter, plus some dark chocolate to add a little extra sweet to the treat!

Chocolate Cranberry Oat Bars

This recipe makes 15 bars at 208 calories each.

Ingredients:

  • 1/2 cup brown sugar (packed)
  • 1 cup peanut butter
  • 2 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/2 cup chopped up dark chocolate (or chips)
  • 1/2 cup dried cranberries

Preparation:

  1. Preheat oven to 170 C and line a c. 10″x6″ baking tray with baking paper.
  2. Combine the brown sugar and peanut butter and beat on medium speed until the mixture is light and fluffy (about 3 minutes).          img_4542
  3. Scrape the sides of bowl and mix in vanilla.
  4. Add the flour, oats, salt and baking soda and mix on medium until combined. This will create a very dry mixture.
  5. With the mixer still on medium speed, slowly pour in the milk.      img_4543
  6. Use your hands to mix in the dark chocolate chunks and the dried cranberries until well distributed.
  7. Press into pan.                                            img_4544
  8. Bake for 15-20 minutes, until the top is golden brown.            img_4545
  9. Allow to cool and then cut into squares.                   img_4548
