Chocolate Orange Cupcakes

It was my friend Fiona’s birthday yesterday and she very sweetly offered to spend part of it looking after Max while I had a meeting. Maxxie got the snip on Monday and isn’t enjoying the recovery process very much.

I wanted to make sure Fiona had an amazing day even while she was babysitting, so I thought I would make her a nice birthday treat! I thought she might like these.

Chocolate Orange Cupcakes

This recipe makes 24 cupcakes at 371 calories per cupcake.

Ingredients:

Cakes:

  • 350g unsalted butter (room temp)
  • 350g castor sugar
  • 6 eggs
  • 80g cocoa
  • 270g self raising flour
  • 90g melted chocolate
  • 3 tsp orange extract

Icing:

  • 250g butter (room temp)
  • 250g icing sugar
  • 1 tsp vanilla
  • 3 tsp orange extract
  • orange food colouring
  • 24 segments of Terry’s Chocolate Orange

Preparation:

  1. Line two cupcake trays with silicone or paper liner.
  2. Preheat the oven to 180 C.
  3. Cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time making sure each one is fully combined before adding the next one.
    • Don’t worry if it looks like the mixture is separating, it will come back together.dsc_0211
  5. Add the flour and cocoa and mix in on low speed to keep the mixture light.
  6. Add the melted chocolate and combine.    dsc_0212
  7. Scoop a large spoonful of the batter into each cupcake liner. dsc_0213
  8. Make for 10-15 minutes until you can insert a toothpick and it comes out clean.
  9. Let the cupcakes completely cool while making the icing.   dsc_0215
  10. For the icing, cream the 250g of butter until light and fluffy.
  11. Add the icing sugar in one spoonful at a time until all is incorporated.
  12. Mix in the vanilla, orange extract and food colouring.
  13. Allow the icing to stir on a high speed for at least 5 minutes until the icing is soft and fluffy.   dsc_0214
