Mint Chocolate Brownies

If you follow my blog posts it is probably really obvious that mint chocolate is a favourite flavour of mine. I thought I would continue with this theme and try a new brownie recipe that combines a nice rich chocolate brownie with a yummy soft peppermint layer.

Mint Chocolate Brownies

This recipe makes 24 brownies at 377 calories each.

Ingredients:

Brownies

  • 115g dark chocolate
  • 1/2 cup butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 1/2 cups plain (all-purpose) flour
  • 1/2 tsp. salt

Topping

  • 1 can (398g) condensed milk
  • 340g white chocolate
  • 1 tsp peppermint extract
  • green food colouring
  • 320g milk chocolate
  • 1 Tbs butter

Preparation:

  1. Line a tray about 12 x 10″ with baking paper and preheat the oven to 160C.
  2. Melt the chocolate and butter together in a double boiler or the microwave. dsc_0185
  3. Mix together the chocolate mixture with the white and brown sugar.  dsc_0186
  4. Using a stand mixer or electric mixer, mix in the eggs until well combined.  dsc_0187
  5. Add the flour and salt and mix until combined.
  6. Pour batter into the baking tray and bake in the oven for about 35 minutes.
    • Brownies are finished when you can insert a toothpick and it comes out clean.                                          dsc_0190
  7. While the brownies cool slightly make up the topping.
  8. In a sauce pan over low heat, warm  up the condensed milk.
  9. Add chocolate and allow to melt over low heat.    dsc_0191
  10. Mix in the peppermint extract and green food colouring.       dsc_0192
  11. Pour the mixture over the brownies.         dsc_0193
  12. Let brownies set in fridge for at least one hour.
  13. In a double boiler or the microwave, melt and combine milk chocolate and butter.
  14. Pour chocolate over top of the peppermint layer.    dsc_0203
  15. Let chocolate firm up and cut into 24 pieces while still slightly soft.   dsc_0204
