I’m back and I am bringing pizza!

So it has been a bit longer than I meant between posts. J and I had a wonderful Christmas holiday out in Canada, but came home with horrendous colds and the last week has mostly been spent moping around the house with the puppy and coughing our heads off.

I am finally feeling a bit more back to my old self, so I thought I would do a fun and easy post and make some dinner at the same time.

I haven’t had the best track record with making my own pizza dough and having it bake through properly when I make it. I saw this great idea for making pizza in cake pans and I thought I would give it another try. The recipe makes a pretty good basic pizza, but has inspired me to try to make an even better one!

You can add whatever toppings you like, so enjoy the pizza you like!

Three Cheese Pepperoni Pizza

This recipe makes two 9″ pizzas at 465 calories for a half pizza (1/4 of the recipe).

Ingredients:

Pizza Base

  • 3/4 cup warm water
  • 1 tsp granulated sugar
  • 1 tsp dry active yeast
  • 1 3/4 cup plain flour
  • 1 tsp salt
  • 3 tsp olive oil

Toppings

  • 1/4 cup pizza sauce
  • 1/2 cup strong cheddar cheese (shredded)
  • 1/2 cup mozzarella (shredded)
  • 1/8 cup parmesan cheese
  • ground pepper
  • thin sliced pepperoni (or your choice of toppings)

Preparation:

  1. Combine water, sugar and yeast in a small bowl and let sit for about five minutes until foaming.                                         dsc_0174
  2. In the bowl of a stand mixer using a dough hook combine the flour and salt on low speed.
  3. Keeping the stand mixer on low, add the yeast mixture slowly.
  4. Turn up the speed on the mixer and add olive oil, mixing until dough comes together.
    • I also had to hand knead the dough for a bit.
  5. Form the dough into a ball and place in a lightly oiled bowl. Cover and let rise for 60-90 minutes until doubled in size.
  6. Preheat the oven to 260 C.
  7. Oil two 9″ round cake pans.
    • You can use any kind of tray, but the round cake pan will give you the automatic round shape.
  8. Divide the dough in half and stretch the dough across the base of the pan and up the sides about 1/4″. If the dough springs back, let it rest for a few minutes.
    • I did this with a mixture of my hands and a rolling pin.
  9. Divide the sauce in half and spread over both pizzas.    dsc_0181
  10. Divide the three types of cheeses in half and spread over the two pizzas.   dsc_0182
  11. Sprinkle tops of pizzas with ground pepper.
  12. Spread over any more toppings (pepperoni!) or leave as just cheese.
  13. Bake in oven for 12-14 minutes.
  14. Cut up and serve warm.

We were so hungry and ate the pizza so fast, I didn’t have time to take a nice finished picture!
