Day 15: Candy Cane Sugar Cookies

I love this sugar cookie recipe. I figured out the recipe while I was making the Halloween Cookies in October and love it so much that I thought I would make it a bit more christmasy.

It is such a nice recipe because you really can do whatever you want with it. You can use any shape of cookie cutter and decorate the top in any way.

I have done the tops of the cookies to show you a few different options, but my favourite (and the one this recipe covers) is to ice the tops with vanilla icing and then press them into crushed candy canes. You can also just dust the tops with icing sugar, or ice them with any flavour of icing you choose. These are really fun for kids to try out there different cookies cutters and decorating skills on as well.

Candy Cane Sugar Cookies

This recipe makes 30 cookies at 123 calories each.

Ingredients:

Cookies:

  • 250g butter
  • 1.5 cups sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 2.5 cups plain flour

Topping:

  • 2 Tbs metled butter
  • 1 cup icing sugar
  • 2 tsp. vanilla extract
  • 2 Tbs milk
  • 4-6 crushed candy canes

Preparation:

  1. In a stand mixer with the paddle attachment, cream butter and sugar together. dsc_1110
  2. Add the eggs and vanilla and mix well.
  3. Mix in the salt and plain flour until all combined.
  4. Wrap the dough in cling film and place in the fridge for at least one hour to chill (you can also leave it overnight if you want).                              dsc_1111
  5. Preheat the oven to 170 C.
  6. Roll the dough out to your desired thickness, about 1cm for me.
  7. Use your cookie cutters or the top of a glass to cut out your shapes.       dsc_1130
  8. Place the cookies on a lined baking tray and bake for about 8-12 minutes so the edges are turning golden.                             dsc_1132
  9. Allow cookies to cool.
  10. In a small bowl, mix together the butter, icing sugar, vanilla extract and milk to form a nice vanilla icing.
  11. Sprinkle crushed candy cane over the top of the icing. Alternatively you can just dust the tops of the cookies with icing sugar.                 dsc_1136
