Day 11: Snickerdoodle Doughnut Bites

Ok, so first off these do not come out as round timbit shapes, but they are still delicious and don’t require you to have special cake pop mounds. They are really delicious and the cinnamon in them make them a nice festive treat!

They are also super easy and fast to whip up, so they can be a nice and easy contribution to a holiday party. The hands-on decorating also makes them a fun recipe to do with kids.

Snickerdoodle Doughnut Bites

This recipe makes 28 bites at 85 calories each.

Ingredients:

  • 1/4 cup butter (softened)
  • 1/4 cup castor sugar
  • 1/4 cup brown sugar (packed)
  • 1 large egg
  • 1/2 cup buttermilk (can be made by adding 1/2 Tbs lemon juice to normal milk)
  • 1 tsp. Vanilla extract
  • 1 1/2 cup plain flour
  • 1 1/2 tsp. Baking powder
  • 1/4 tsp. Salt
  • 1.5-2 tsp. Cinnamon
  • 3 Tbs butter
  • 1/3 cup castor or granulated sugar
  • 1.5 tsp. Ground cinnamon

Preparation:

  1. Preheat the oven to 190 C and lightly grease a mini muffin tray (you can use normal size tray if that is all you have).
  2. In a stand mixer with a paddle attachment, cream the butter and two sugars until pale and fluffy.              dsc_0296
  3. Add the eggs, buttermilk and vanilla and beat together.
  4. Set the stand mixer on low and mix in the flour, baking powder, salt and cinnamon until just combined.
  5. The dough is fairly sticky, so use a spoon to fill each pot on the mini muffin tray about 1/2 full.
  6. Bake for about 8 minutes until just beginning to turn brown.
  7. Allow the doughnut bites to completely cool.
  8. Melt the 3 Tbs of butter and place in a small bowl.
  9. In a second small bowl, combine sugar and cinnamon.
  10. Roll each doughnut bite in the butter and then the cinnamon sugar.
