Day 1: Ginger Molasses Cookies

Day One! This is the kickoff for the countdown to Christmas!

Molasses cookies seemed like the perfect holiday treat to kick off with. The chewy cookie with its warm flavours is such a nice treat for the holidays. These are really good on their own, especially when they are warm from the oven, but are also great for dipping into a nice hot chocolate.

The recipe did almost stump me though, because I couldn’t find molasses anywhere in Edinburgh. Turns out here it is called black treacle instead and if I had been looking for that from the start, I would have found it at the first store. I got the ingredients I need just in time, so here is the first yummy holiday recipe!

Ginger Molasses Cookies

This recipe made 34 cookies at 99 calories each.

Ingredients:

  • 3/4 cup butter (softened)
  • 1 cup castor sugar
  • 1/4 cup molasses/black treacle
  • 1 egg
  • 2 cups plain flour
  • 1 tsp baking soda
  • 3/4tsp ground cinnamon
  • 1/2tsp ground cloves
  • 1/8 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 cup granulated sugar (coating)

Preparation:

  1. Preheat the oven to 190 C and line several baking tray (I needed 3) with baking paper.
  2. In a stand mixer (or large bowl) beat butter and sugar until light and fluffy.dsc_0003
  3. Add the molasses and egg and mix until just combined. You will need to scrape the sides of the bowl.             dsc_0004
  4. In a separate bowl, combine the flour, baking soda, spices and salt.
  5. Slowly add the dry ingredients to the stand mixer, beating on low until all combined.
  6. Place the 1/4 cup of sugar in a small bowl.
  7. Take a small amount of dough from the ball (about 1.5 Tbs) and drop it in the sugar, then roll between your hand to form a ball.
  8. Place cookies evenly across the baking tray leaving room for them to spread (about 2″).
  9. Bake cookies for 9-10 minutes.
  10. Let cool and enjoy!
